We all love those wonderful oatmeal pies that come in a box. Now you can make your own with a few simple ingredients. Wrap them in plastic and place in the freezer to keep them extra fresh and ready for summer afternoon snacks. Happy eating!

Homemade Oatmeal Pies 1 can vanilla frosting 2 sticks margarine 3/4 C. white sugar 3/4 C. brown sugar 2 eggs 1/2 C. cake flour (no substitutes) 1/2 tsp. salt 1 tsp. soda 1 tsp. cinnamon 1 tsp. vanilla 2 C. one-minute oatmeal 

Cream together margarine, sugars, egg and vanilla. In a separate container, combine flour, salt, soda and cinnamon. With a mixer combine wet and dry ingredients. Beat in oatmeal. Drop by teaspoonfuls on a nonstick cookie sheet or on a cookie sheet covered in foil and sprayed with Pam. Bake for 10 minutes at 350 degrees. Finish off baking the tops under the broiler. Cool completely. Frost sides of half of cookies and make sandwiches with remaining cookies.
