This week, I continue my low-cal cooking series with some guilt-free desserts that are guaranteed not to break your New Year's resolutions! You'll think you're eating that fat-laden famous candy bar dessert instead of a low-cal, just over 100 calories treat with Skinny Snickers Pie. Use up those leftover holiday candy canes with Chocolate Mint Meringues (you'll think you're eating Girl Scout Thin Mints!). And, you'll think you've died and gone to Italy with this low-cal version of Tiramisu. Happy eating!

Skinny Snickers Pie

2 C. low-calorie vanilla ice cream, softened 1 C. light non-dairy whipped topping 1/4 C. crunchy peanut butter 1 small pkg. sugar free instant chocolate pudding 1 tsp. vanilla

Soften the ice cream and whipped topping. Add vanilla, peanut butter and instant pudding. Blend well with electric mixer. Pour into an 8-inch square pan. Freeze. Makes 12 servings with 109 calories and 5 grams of fat per serving.

Chocolate Mint Meringues

2 egg whites 1/8 tsp. salt 1/8 tsp. cream of tartar 1/2 C. white sugar 2 small candy canes, crushed fine 1/2 C. mini chocolate chips

Preheat oven to 225 degrees and line 2 cookie sheets with parchment paper. In a large glass or metal mixing bowl, beat egg whites, salt and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Carefully fold in crushed candy canes and chocolate chips. Drop by spoonfuls 1 inch apart on cookie sheets. Bake for 1 1/2 hours. Do not allow cookies to brown. Turn off oven and let the meringues sit in the oven to dry overnight. Makes 24 cookies. Each one as 39 calories, 1 gram of fat and 7 carbs.

Low-Cal Tiramisu

1 8-oz. pkg. fat free cream heese, softened 3 C. skim milk 2 (3.4 oz.) pkgs. sugar-free instant vanilla pudding 1 8-oz. container light non-dairy whipped topping, thawed and divided 48 reduced fat Nilla Wafers 1/2 C. strong coffee 2 squares bittersweet chocolate, grated 1 C. fresh raspberries (optional)

Beat cream cheese until creamy, gradually adding milk and pudding mixes. Fold in 2 C. whipped topping. Line 2 1/2 quart bowl with 24 wafers. Drizzle with 1/4 C. coffee. Top with half of pudding mixture and half of chocolate. Repeat layers, starting with wafers. Top with remaining whipped topping and raspberries. Makes 16 servings with 187 calories and 4 grams of fat per serving.
