This week I feature some simple and fruity slaws and salad. Chopped Apple Slaw is tart, crisp and a welcomed twist on a traditional favorite. Peachy Fruit Salad is one of my favorite fruit salad standbys. And, Apricot Salad has a surprise ingredient- baby food! Happy eating!
Chopped Apple Slaw
3 medium Granny Smith apples,
chopped
2 grated carrots
1/2 C. mayonnaise
1/3 C. raisins
3 T. sugar
1/2 C. pecans
Combine all ingredients and chill before serving.
Peachy Fruit Salad
1 can peach pie filling
1 can mandarin oranges, drained
1 can large can pineapple chunks,
drained
1 pkg. frozen strawberries
4 bananas, sliced
2 C. coconut
Combine all ingredients and chill before serving.
Apricot Salad
2 3-oz. pkgs. apricot (or peach)
Jell-O
2/3 C. sugar
2/3 C. water
2 (4.75-oz.) jars apricot baby food
1 20-oz. can crushed pineapple,
undrained
1 can sweetened condensed milk
1 8-oz. pkg. cream cheese
Combine Jell-O, sugar and water in saucepan, bringing to a boil and stirring to dissolve. Remove from heat and stir in pineapple and baby food. Set aside to cool. Combine sweetened condensed milk and cream cheese, beating until smooth. Stir in Jell-O mixture and pour into bowl. Chill for at least two hours.
