Hoosier Home Cookin'

This week I feature a an eclectic collection of a few of my favorite recipes. Chicken Rolls make for a great entrée served with a crisp salad or as an appetizer on a Spring celebration buffet. It's one of those Paula Deen recipes - lots of butter and cream cheese! Two- Bean Lasagna provides an unusual twist to an old classic. And, Crispy Baked Onion Rings are a light, tasty side dish to your favorite grilled burger.

Chicken Rolls




6 boneless chicken breasts,
cooked and diced
2 pkgs. crescent rolls
8 oz. cream cheese
3/4 stick butter
1 tsp. pepper
3 slices bread, made into crumbs

Mix chicken pieces with cream cheese, butter and pepper. Flatten out crescent rolls. Place one heaping tablespoon of chicken mixture in the center of each roll and seal it in rolls. Dip rolls in melted butter and then into bread crumbs. Bake at 350 degrees for 20 to 30 minutes or until golden brown.


Two-Bean Lasagna






1 can white beans, drained
1 can kidney beans, drained
1 lb. lasagna noodles, dry
3/4 C. grated mozzarella cheese
1 C. Ricotta Cheese
1/4 C. parmesan cheese
2 16-oz. cans chopped tomatoes,
drained
1 lb. ground beef
1 (16-oz.) can tomato sauce

Brown beef, drain. Set aside. In 9x13 pan. Layer in the following order: half of the tomato sauce, one layer of noodles, half of the Ricotta, half of beef; half of mozzarella, all of the white beans. Repeat layers, then top with parmesan cheese. Bake covered at 300 degrees for 90 minutes or until dish is heated through and bubbly. Remove foil and cook another 5 minutes. Let set 10 minutes before serving.

Crispy Baked Onion Rings


2 large sweet onions
1 (7-oz.) pkg. cornflakes cereal,
crushed
1 tsp. seasoned salt
2 tsp. sugar
1 tsp. paprika
1 C. egg substitute
vegetable cooking spray

Cut each onion into 4 thick slices and separate into rings, reserving smallest rings for other uses. Set aside. Combine cereal and next three ingredients; divide in half and set aside. Beat egg substitute at high speed with an electric mixer until soft peaks form. Dip half of onion rings in egg substitute; dredge in half of crumb mixture. Place in single layer on baking sheets that have been coated with cooking spray. Repeat procedure with remaining onion rings and crumb mixture. Bake at 375 degrees for 15 minutes or until crisp; serve warm.
