Rounding out my series on Easter recipes from my grandmother, are three delicious additions to your holiday spread. Sausage pinwheels are a great make-ahead breakfast to serve with those hard-boiled eggs after an early morning hunt. Holiday Broccoli Casserole is great served with or without the meat. And, the Banana Split Cake is to die for.

Easter Brunch Sausage Pinwheels
2 C. sifted self-rising flour
1/4 C. shortening
2/3 C. milk
1 lb. sausage
Cut shortening into flour until fine crumbs form. Add milk and mix quickly with a fork. Turn dough out on lightly floured board and knead just until smooth. Roll out into a quarter inch thick rectangle. Spread sausage thinly over dough, roll up like a jellyroll and slice into half-inch slices. Place slices on ungreased baking sheet. Bake about 30 minutes at 350 degrees or until pinwheels are light golden brown.
Quick & Easy Holiday Broccoli Casserole
1 pkg. (10-oz.) chopped broccoli
1 C. instant rice
1 C. diced cooked chicken (if desired)
1 can cream of mushroom soup
1 C. milk (reduce to ¾ C. if chicken
isn't used)
1 C. grated cheddar cheese
1 medium onion, chopped
Place vegetables in 1 ½ quart baking dish. Stir in rice, soup, milk, onion and half the cheese. Sprinkle with remaining cheese. Bake for 45 minutes at 350 degrees or until hot and bubbly.
Delicious Banana Split Dessert
1/2 C. melted margarine
2 C. crushed vanilla wafers
1/2 C. softened margarine
2 C. powdered sugar
1 (8-oz.) pkg. cream cheese, softened
1/4 C. pineapple juice
3 C. nondairy whipped topping, divided
3 large bananas, sliced
1 large can crushed pineapple,
drained
1 pt. fresh strawberries, sliced
1/4 C. chopped nuts
1/4 C. toasted coconut
1/4 C. chocolate syrup
Mix melted margarine and vanilla wafers and press onto bottom of a 9x13 baking dish. Bake for 8-10 minutes at 350 degrees. Cool completely. Combine remaining half C margarine, powdered sugar, cream cheese and pineapple juice. Beat until smooth, then fold in 1 C. whipped topping. Spread mixture on top of cooled crust. Layer with sliced bananas, followed by crushed pineapple, sliced strawberries and remaining topping. Sprinkle with nuts and coconut. Refrigerate for at least 4 hours. Drizzle with chocolate syrup and garnish with sliced strawberries or maraschino cherries.
