This week, I wrap up my annual winter soup series with three delicious recipes. Although, chili isn't technically soup, it's a perfect winter time treat and perfect for eating during upcoming Super Bowl events. Black Bean Chicken Chili takes only minutes to make and forget in the crockpot. And Kielbasa Crockpot Chili is definitely a spicy twist on regular old chili! Happy eating.

Black Bean Chicken Chili


2 C. cooked cubed chicken
2 15-oz. cans black beans, drained
4 oz. diced green chilies
2 15-oz. cans diced tomatoes
1 pkg. chili seasonings
1 C. chicken broth

Combine all ingredients and simmer in crockpot.

Kielbasa Crockpot Chili


4 (14.5 oz.) cans chicken broth
16 oz. smoked sausage, cut in half length wise and then sliced
15 oz. can pinto beans, drained and rinsed
15-oz. can black beans, rinsed and drained
4 medium carrots, sliced
3 stalks celery, chopped
1 large onion, chopped
1 tsp. thyme
1 T. Chili powder
pepper to taste
1 (14.5 oz.) can diced tomatoes with chilies
 

 

Mix all ingredients, except tomatoes in a 5 to 6 quart crockpot. Cover and cook on low heat at least 6 hours or until beans are tender. Stir in tomatoes, cover and cook on high heat until heated through.
