This week, I continue my series on comfort food casseroles. Even though it's not St. Paddy's Day, you'll love Corned Beef and Cabbage Casserole. Cheesy Spaghetti Casserole is definitely a twist on your average pasta dish. And, I can't believe I'm actually including a recipe with Spam, that oftenjoked about canned product that's probably in the back corner of your pantry. But the recipe, Spam and Rice Casserole is actually quite tasty and extremely simple. If you just can't stand the thought of Spam, replace with ham. Happy eating!

Corned Beef & Cabbage Casserole

2 lbs. chopped cabbage 1 can (12 oz.) corned beef, diced 1 can (11 oz.) Cheddar cheese soup, undiluted 1 can (5 oz.) evaporated milk 3 tbsp. grated onion 1 tbsp. mustard 1/2 tsp. salt 4 slices bread, cubed 2 tbsp. margarine, melted 4 slices American cheese

Cook cabbage in small amount boiling water 5-8 minutes. Drain well. Arrange alternate layers of cabbage and corned beef in shallow 2 -quart casserole. Combine soup, milk, onion, mustard and salt; stir well. Pour over corned beef and cabbage. Toss breadcrumbs in margarine. Arrange over top of casserole. Bake at 350 degrees 45 minutes. Arrange cheese slices over top of casserole. Bake 5 minutes or until cheese is melted.

Cheesy Spaghetti Casserole

10 oz. cooked thin spaghetti 3 cups shredded Monterey Jack cheese 1/2 cup Parmesan cheese 1-1/2 cup sour cream 1 10 oz. pkg. frozen spinach 1/2 tsp. garlic powder 1 large can French fried onion rings 2 eggs - lightly beaten 1/4 cup milk 1/4 cup milk

Thaw spinach and drain well. Break spaghetti into 2 inch pieces. Butter a 9x13 pan. In a large bowl, combine egg, sour cream, milk, cheeses & garlic powder. Mix well. Add spinach and mix. Add spaghetti and mix. Finally, coarsely crush 1/2 the can of Onion Rings and add. Pour into pan and bake for 30 minutes in a 350 degree oven (covered). Remove pan to add remaining onion rings. Return to

oven and bake for 5 more minutes (uncovered).

Spam and Rice Casserole

5 cups cooked rice 1 lg. can Spam (cubed) 1/2 cup chopped onion 1/2 cup chopped celery 1 cup Cheese Whiz 1/4 cup butter 1 can cream of mushroom soup 1 pkg. frozen chopped broccoli (thawed)

Melt the Cheese Whiz, butter and soup over hot rice in a 3qt casserole dish. Add the rest of the ingredients. Bake at 325 for 45 min.
