With local schools back in session, students everywhere will be looking for those afterclass snacks the minute their bookbags hit the kitchen counter. Elizabeth Overholser, the new bride of Flora farmer Kent Overholser, shares this simple and fun recipe that the kids can make in the microwave. On a healthier note, English Muffin Pizzas and Frozen Yogurt Pops are quick, easy and your kids will love them!

Liz Overholser's Five Minute Chocolate Mug Cake

4 T. cake flour 4 T. sugar 2 T. cocoa 1 egg 3 T. milk 3 T. oil 3 T. chocolate chips 1 small cap of vanilla extract 1 coffee mug that holds at least 8 oz. Place dry ingredients in mug and mix well. Add egg and mix thoroughly. Pour in the milk and oil, mixing well. Add chocolate chips and vanilla, then mix again. Microwave for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed. Allow to cool a little and tip out onto a plate. Serve with ice cream!

English Muffin Pizzas

English muffins Pizza or spaghetti sauce Mozzarella cheese Assorted pizza toppings

Preheat oven to 350 degrees. Place pre-sliced muffins face up on a cookie sheet. Put sauce on each muffin half and top with assorted toppings and cheese. Bake for five minutes or until cheese is melted and bubbly.

Frozen Yogurt Berry Cups

1 8-oz. cup of berry yogurt (any

flavor) About half a can of diced pears

with juice

Place in blender and blend until smooth. Pour into paper cups and freeze over night.
