Continuing with my summer salad theme, this week I'll feature some cool, savory choices. Deviled Lettuce is unusual, but surprisingly delicious. Corn Salad is always a simple, yet delicious treat. Happy eating! Deviled Lettuce 1 head crisp lettuce 1 8-oz. pkg. cream cheese 1/2 C. Miracle Whip 1 (2 ¼ oz) cans deviled ham 1/2 C. chopped celery 1/2 C. chopped green pepper 2 T. chopped pimiento 1 T. finely chopped onion

Hollow out head of lettuce. Set aside. Mix together remaining ingredients. Fill out the hollowed out lettuce. Wrap firmly and chill for several hours. Serve in slices or wedges.

Corn Salad 1 12-oz. can whole kernel corn, drained 1 onion, finely chopped 1/2 C. green pepper, chopped 2 T. minced parsley 2 T. cider vinegar 1 T. vegetable oil 1/4 tsp salt 1/4 tsp. pepper

Combine all ingredients and chill several hours. The vinegar and oil can be omitted and replaced with mayonnaise if desired. .
