A recent weekend trip to a bed and breakfast in Shipshewana netted a few tasty recipes. Amish Peanut Butter Spread was served at several restaurants. The smooth creamy concoction was wonderfully decadent served on homemade sourdough bread. And, from the B&B, Strawberry Poppy Seed Salad was refreshingly delicious. Happy eating!

Amish Peanut Butter Spread

1/2 C. creamy peanut butter 1/4 C. marshmallow créme 1 C. corn syrup

Mix all ingredients well. Serve at room temperature on bread or as an ice cream topping.

B&B Strawberry Poppyseed Salad

1 lb. mixed baby greens 1 qt. strawberries, washed, hulled and sliced 1/4 C. slivered almonds 1 C. good quality garlic croutons 1/2 C. shredded Swiss cheese 8 oz. grilled chicken breast, sliced or chunked 1 C. poppy seed salad dressing

In a large salad bowl, combine first six ingredients. Pour salad dressing over salad and toss gently to coat.
