This week, I continue with my strawberry series. Amaretto Strawberries are a cool, sweet, summertime treat. Serve them in stemmed wine glasses for a gorgeous light dessert. Chilled Strawberry Mint Soup is a refreshing and creamy way to serve strawberries and mint from your herb garden. And, nothing is prettier than a big bowl of fresh stemmed Strawberry Dippers.

Amaretto Strawberries 1 pint fresh strawberries 1/4 C. Amaretto liqueur Vanilla ice cream Slivered almonds

Wash and hull berries. Drain. In a large bowl, marinate strawberries in liqueur overnight. Serve over ice cream and sprinkle with slivered almonds.

Chilled Strawberry Mint Soup 1 1/2 C. sliced fresh strawberries 3/4 C. sour cream 3/4 C. whipping cream 2 T. orange juice 2 T. honey 1 1/2 tsp. finely chopped fresh mint leaves Fresh strawberries and mint for garnish

In a food processor or blender, place the strawberries, sour cream, whipping cream, orange juice and honey. Whirl until smooth. Stir in mint. Taste for sweetness. If necessary, add more honey. Refrigerate until completely chilled. To serve, place soup into cold soup bowls and top with strawberry slices and mint sprigs.

Strawberry Dippers Fresh stemmed strawberries, washed and dried 1 C. sour cream or créme fraiche 1 C. firmly packed brown sugar

Arrange strawberries in a large bowl or platter. Put sour cream and brown sugar into two small bowls. To serve, let each guest dip a strawberry into sour cream and then into brown sugar.
