This week's recipes feature good old American Hamburger! Celebrate upcoming events with a dish fit for a king. Elvis Presley meatloaf comes from a family friend of mine. She can't promise if it's authentic "Elvis," but it does taste pretty good! You'll really like the tip of adding sandwich bread to your pan before the meat loaf mixture. The bread absorbs excess grease and makes for a healthier meal. Wow guests at parties with Party Meatballs. When I make this recipe, I'll double the sauce recipe and toss in 2 lbs. of cocktail weenies with the meatballs.

Elvis Presley Meatloaf

2 lbs. ground chuck
2 eggs, beaten
1 medium onion, chopped
1 medium green pepper, chopped
1 1/2 C. crushed buttery crackers
3/4 C. sour cream
seasoning salt and black pepper to taste
2 C. ketchup, room temperature

In a large bowl, put meat, eggs, cracker crumbs, onion green pepper, sour cream, seasoning salt and pepper. Mix with hands. Place into a 9x3- inch baking pan lined with 7 pieces of sandwich bread. Bake for 40-50 minutes at 350 degrees. Cut in squares. Pour ketchup over the meatloaf. Remove meatloaf from pan and remove bread. Serve as Elvis' mama would have - with green beans and lots of mashed potatoes!

Party Meatballs

1 pound ground beef
1/2 C. bread crumbs
1/3 C. minced onion
1/4 C. milk
1 egg, beaten
1 T parsley
1 tsp. salt
1/2 tsp. Worcestershire sauce
1/8 tsp. pepper
1 12-oz. jar of bottled chili sauce
1 10-oz. jar grape jelly

Combine first nine ingredients until mixed well. Shape into 1-inch balls and fry in hot oil. Drain well on paper towels. In a small saucepan over medium heat, combine chili sauce and jelly. Heat and stir until jelly is melted and mixture is smooth. Add meatballs and simmer for 30 minutes.
