Over the years, several Hoosier Homecookin' columns have been dedicated to recipes containing five ingredients. This week, I simplify things even further with some pretty tasty dishes made with only three or four items. Peachy Bacon Salad is simple, pretty and delicious. And, Bubba Beef is a quicker variation of a family favorite at my house. Wrap up this three-course meal with Speedy Cheesecake.

Peachy Bacon Salad


1 10-to 16-oz. bag spring salad mix
12 oz. sliced Canadian bacon
2 fresh peaches, sliced
1/2 C. honey mustard salad dressing

Cut Canadian bacon into quarters and toss with remaining ingredients in a large bowl. Serve immediately.

Bubba Beef


1 3-lb. beef roast (chuck or top
round)
1 med. jar pepperoncini peppers
(spicey)
slivers of garlic

Cut slits in roast and insert garlic slivers. Place beef in crockpot. Dump peppers (with juice, stems and everything) on top of roast. Cook on low for at least 12 hours. When cool, shred beef using two forks and spread on sub rolls. Serve with bowls of juice for dipping.

Speedy No-Bake

Cheesecake


8-oz. cream cheese, softened
3 T. lemon juice
14-oz. can sweetened condensed
milk
1 9" graham cracker crust

In a medium bowl, beat cream cheese until smooth and fluffy. Add lemon juice and sweetened condensed milk and mix until well combined. Pour into crust and chill for at least 4 hours.
