This week I wrap up my school lunch series with a few tasty sweet endings. Cinnamon Popcorn is a light and sweet/spicy treat. Homemade Granola Bars can end a meal or start a day. Banana Chocolate Chip cookies will transport your little ones to a tropical rainforest. And, Backpack Mix-up is a delicious portable snack.

8 cups popped popcorn
2 T. butter
1/4 tsp. cinnamon
1 T. brown sugar
1/4 tsp. vanilla extract
  In a small saucepan, melt butter
on low heat until melted. Add cinnamon,
      brown sugar and vanilla, stirring
for one minute until well blended. Drizzle over popcorn and toss until well coated. If desired, throw in chopped peanuts, dried apples or raisins.

1 C. granola
1 C. quick cooking rolled oats
1 C. chopped nuts
1/2 C. all purpose flour
1/2 C. raisins, dried cranberries or
  other dried fruit bits
1 egg, beaten
1/3 C. honey
1/3 C. vegetable oil
1/4 C. packed brown sugar
1/2 tsp. ground cinnamon

Preheat oven to 325 degrees. Line an 8x8x2-inch baking pan with foil. Grease well. In a mixing bowl, combine granola, oats, nuts, flour and fruit. Stir in egg, honey, oil, brown sugar and cinnamon. Press evenly into pan. Bake for 30 minutes or until lightly brown around edges. Cool completely. Use foil to remove from pan. Cut into 24 bars.

2 1/4 C. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 large ripe bananas
2 tsp. banana or vanilla extract
1 C. vegetable shortening
1/2 C. granulated sugar
1/2 C. firmly packed brown sugar
2 large eggs
1 C. semisweet chocolate chips
1 C. chopped walnuts (optional)

Preheat oven to 400 degrees. Adjust oven rack to middle shelf. Sift together flour, baking powder, baking soda and salt. Set aside. Mash bananas with the extract, making about 1 cup. Set aside. In a large bowl, beat the shortening and sugars until light and fluffy, then blend in the bananas. Add the eggs, one at a time, beating after each addition (the mixture will look curdled). Slowly add flour, stopping frequently to scrape down sides of the bowl. Fold in chips and nuts if desired. Drop by heaping teaspoonfuls one and one-half inches apart onto ungreased baking sheets. Bake about 12 minutes. Transfer to wire racks to cool. Yield about 6 dozen.

1 bag microwave popcorn, popped
2 T. M&M candies
1/2 C. raisins
2 T. roasted peanuts
2 T sugar
  While popcorn is still warm, toss
with sugar to coat. Cool completely,
then add other ingredients. Store in
an airtight container.
