I've heard it said in Indiana: batter anything; deep fry it; and you'll be able to sell it at a festival or fair. With that said, my third installment of the candy recipe series features one of the most popular fried fair foods - Deep Fried Candy Bars. I'll have to admit it, even if it was against my better judgment. Last summer, I tried one of the treats - Snickers style at the annual Earth Festival in Atlanta. It wasn't that bad, but it was a little too much. So, try the recipe with miniature candy bars instead. You'll enjoy the silkiness and simplicity of Clark Bark Pie and Heath Logs are sure to become a favorite family cookie recipe. Finally, fire up those campfires and try the family-friendly Hershey Bar Banana Boats. They're ooey, gooey and messy, but the kids will love them!

Fried Candy Bars 1 egg 1 C. milk 1 T. vegetable oil 1 C. all-purpose flour 1 tsp. baking powder pinch of salt candy bars (Mars, Snickers, Almond
Joy, Kit Kat or Twix) powdered sugar
Freeze the candy bars. Combine egg, milk and vegetable oil in a cup. In a bowl, combine flour, baking powder and salt. Pour the wet ingredients into the dry ingredients and mix well with a wire whisk. Cover and chill for half an hour. Remove batter from refrigerator. Heat about 4 cups of oil or shortening to 375 degrees. Dip the chilled candy bar into the batter and gently drop into the oil. Cook only until the outside is golden. Remove and drain on brown paper. Allow to cool for a minute. Roll in powdered sugar.
Clark Bar Pie 1 9-inch vanilla wafer crumb crust 16 marshmallows, quartered 1/3 C. milk 3 Clark Bars, finely chopped 1 tsp. vanilla extract 1 C. whipping cream, whipped
Combine marshmallows and milk in top of double boiler. Heat over boiling water until marshmallows are melted. Cool. Fold in candy, vanilla extract and whipped cream. Pour into crust. Chill thoroughly. Garnish with additional whipped cream and chopped candy.
Heath Logs 2 C. all-purpose flour 1/2 C. packed brown sugar 1/2 C. butter or margarine 1 tsp. vanilla extract 1 egg 2 (1.4-oz.) Heath bars, chopped 3 oz. semi-sweet chocolate chips
melted with 1 T. shortening
Mix margarine and brown sugar. Add egg and vanilla extract, then flour (dough will be thick). Add chopped candy. Form into small logs and bake at 350 degrees for 10 to 15 minutes. Cool completely. Dip one end of each cookie into the melted chocolate and shortening mixture. Place on waxed paper. Let chocolate dry, refrigerating if necessary. Makes about 30 logs.
Hershey Bar Banana
Boats 1 banana 1/2 Hershey bar 2 large marshmallows
Cut bananas from one end to the other but not all the way through the skin. Cut marshmallows in half and carefully slide into cut banana. Put the candy bar between the marshmallows. Wrap with aluminum foil and place in oven (or on the hot coals of a campfire) and bake for 5 minutes. Serve with a spoon and eat right out of the peel.
