Some are molded. Some are frozen. Some are whipped in a bowl. But, no matter how you serve them, this week's salad recipes will be perfect for your Easter buffet. Easter Blueberry Salad includes a packet of Dream Whip in the recipe (yes, you can still buy it). And, both 7-Up Salad and Coca-Cola Salad feature our favorite soft drink flavors. And, finally a savory offering - Jalapeno Corn Salad. The three ingredients may seem like an unusual combination, but trust me: you're going to love it! Next week: more salads for your holiday table. 7-Up Salad 1 8-oz. pkg. cream cheese, softened 1 C boiling water 1 small pkg. lemon Jell-O 1 tsp. vanilla 1 sm. can crushed pineapple, drained 1 tsp. sugar 1 C. 7-Up, cold 1 C. chopped pecans
Mix all together while water is hot: first cream cheese and Jell-O with hot water; add remaining ingredients. Pour into pan and chill until set.
Coca Cola Salad 1 pkg. cherry Jell-O 1 can Bing cherries 1 sm. can crushed pineapple 1/2 C. nuts 1 pkg. cream cheese 1 C. cherry juice 3/4 C. Coke
Dissolve Jell-O in 1 cup hot cherry juice. Add three-fourths cup Coke. Cool. When Jell-O starts to set, add the pineapple, cherries, nuts and cheese broken into bits. Turn into mold and chill.
Spicy Corn Salad 2 cans white shoe peg corn 8 oz. cream cheese Diced jalapeno peppers
Drain corn. Mix with softened cream cheese. Add jalapenos to taste. Refrigerate overnight.
Easter Blueberry Salad 1 lg. pkg. black cherry Jell-O 2 C. boiling water 1 small can blueberries 15 oz. can crushed pineapple 1/2 C. chopped walnuts 1 pkg. Dream Whip
Mix Jell-O with boiling water. Drain blueberries and add juice to Jell-O. Cool. Set aside three-quarter cups Jell-O and juice; add blueberries, pineapple and nuts to JellO. Refrigerate until well set. Mix Dream Whip as directed on box, then slowly add the cooled Jell-O and juice to Dream Whip. Continue beating until lavender in color. Place in bowl and chill.
